Rice, grains, or flatbreads are usually at the center of the Indian plate. There are about as many varieties of rice in India as there are regional dimensions for Indian cooking. To keep things simple, the recipes here use the classic and brown varieties of basmati rice. The Instant Pot® has helped me discover brown rice again. The rice setting does a magical job of cooking brown rice to a perfect, slightly chewy texture. For everyday cooking, I converted two classic white rice dishes, Chingri Biryani (Shrimp and Rice Casserole) and Jeera Pulao (Cumin-Scented Rice), into brown rice dishes.
