Excepting for its use in the preparation of terrines, pâtés and various forcemeats, the flesh of old hares is not very highly esteemed. The leveret or young hare of up to 1 year old is the most suitable for all purposes; its weight rarely exceeds 3 kilos (6¾ lb). The ears of the young hare are very fragile and the ease with which they can be torn can be a good guide to its age.
