In this chapter, I will go through how to use nuts and seeds to make dairy-free yogurt, cheese and kefir products. I am especially excited about the nut cheeses as these are such an excellent alternative to normal cheese if you are trying to avoid dairy. I would not go as far as to say that nut cheese tastes quite the same as dairy cheese but it is definitely similar.
Nuts are a great way of getting healthy fats, protein and minerals into your diet. There is a lot of evidence-based research indicating that nuts are good for health and longevity. Research also tells us nuts do not make you fat, which is sometimes a concern.
