A though rice, cooked in various ways, is the staple food of most Chinese cooking, noodles also play an important role. In northern Chinese cuisine, wheat in the form of rolls and pancakes is customarily eaten but these recipes have not penetrated southern Chinese regional cooking. So, rice and rice noodles dominate in Hong Kong cuisine. (Though for those who prefer them, many kinds of northern Chinese or Western-style pancakes and breads are readily available.) The recipes here give an indication of the imaginative uses to which rice may be put, whether boiled, fried or as a noodle.
