I can’t imagine cooking without the beloved chilli, life would be too boring and dull. Chillies are a flamboyant element of the cooking process. They create heat, fire and really get the palate going. As a raw ingredient, they are a symbol of strength and versatility. The origin of the chilli can be traced back to South America well before trade routes were established. Today the use of chillies in cooking can be found in many cuisines of the world. They have become an essential and indispensable ingredient in the historical development of food. There are many varieties of chilli, each giving a specific flavour, pungency, aroma and heat. For the regular chilli consumer, their taste is addictive.
