The best ice creams are those made with double cream and fresh fruits or other flavourings. Very good ones can also be made with equal parts of custard and cream, with flavouring added.
Plainer creams are made with custard only.
Always be careful when adding sugar to the basic ice cream mixture. If the mixture is too sweet, it will not freeze properly, and if not sweet enough, it will be hard and rough.
