One of my cherished memories from childhood is watching my mother make noodles at our kitchen table. I’d sit next to her, observing how meticulously and accurately she weighed each ingredient. Her hands mixed the ingredients in a practiced, deliberate manner. Flour would spread across the table, and she’d roll out the dough, working it through the pasta machine as if she’d done it a million times before.
I always insisted on helping by turning the crank while she fed the dough and caught it on the other side. Out would come perfect noodles, carefully shaped into portion-sized bundles. The chicken broth, simmering since morning, awaited the freshly made noodles. She’d swiftly cook the noodles in a pot of boiling water, strain them, and then serve them up in a bowl with steaming broth and a medley of toppings.
