Daniel Doherty kicked off his culinary career with a specialist chef’s scholarship in conjunction with Bournemouth & Poole College (2000-03), and was placed in Michelin-starred restaurant 1 Lombard Street in London (2000-03). His proper work career began at 1 Lombard Street’s two sister restaurants - Noble Rot, in Mayfair, and Graze Restaurant and Bar, in Maida Vale (2005-06). Daniel then worked at Roux Fine Dining as Senior Sous Chef (2006-08), before his first Head Chef role at The Ambassador in Exmouth Market (2008-09), followed by The Empress in Victoria Park (2009-10), and then The Old Brewery in Greenwich (2010-12). Daniel is Executive Chef at Duck & Waffle on the 40th floor of the Heron Tower in the City of London. Daniel’s modern take on European cuisine showcases his culinary diversity, with an emphasis on local, rustic, seasonal and sustainable British ingredients. He won the Rising Star Chef Award at the Tatler Restaurant Awards 2013, appeared on Channel 4’s Sunday Brunch (2014), published the highly anticipated Duck & Waffle cookbook (2014) and was featured on BBC One’s Saturday Kitchen (2014). Daniel has launched the ‘Chefs of Tomorrow’ initiative to showcase young British culinary talent, and is also a patron for the charity ‘Learning for Life’.
