I have Thai noodle fever. Sipped, slurped, and twirled, noodles are a beloved part of Thai cuisine and come in all sorts of shapes and sizes. The array of Thai noodles is dizzying—egg noodles, cellophane noodles, fresh rice noodles, thin vermicelli noodles, dried rice noodles—it goes on and on. I’ve picked a handful of my Thai noodle favorites for this chapter. Just talking about it makes me want to whip some up right now! Since Thai noodles are made of either rice or mung beans, they’re fantastic for most gluten-free diets.
