I love vegetarian food, probably due to the fact that my sister has been vegetarian for most of her life and Mum became a vegetarian in her sixties, so meals taken at home were invariably meat free but innovative and full of enticing tastes and flavours. Even though Dad wasn’t a veggie, he cooked and ate a plant-based diet at home, but did enjoy a bacon butty (or sausage butty) when he went out, or a steak and kidney pie in the pub.
Thankfully we’ve steered away from the ubiquitous “nut roast” of the 1970s, and vegetarian food today is exciting, exotic and packed with interesting ingredients. I've observed on many occasions it’s enjoyed by meat-eaters as well as fully fledged veggies alike. I'm not saying that the nut roast is dead, I've enjoyed some delicious nut roasts in my time, but there’s so much more to offer which I aim to show in this section of the main courses chapter.
