Flatbreads are the most popular type of bread worldwide. They are also the oldest, having been made for more than 6,000 years. The original flatbreads were unleavened—nothing more than a paste made of ground grain and water cooked on a heated stone. Today, the term flatbread encompasses everything from simple pancake-style wrappers and tortillas made with nothing more than flour, water, and salt to crisp, paper-thin crackers and more complex creations that are leavened with yeast and filled or topped with grilled vegetables, olives, or herbs.
