Although meat was traditionally eaten sparingly and mostly on Sundays and holidays as recently as 50 years ago, some wonderful dishes make a feast out of humble ingredients such as chicken legs. I buy the whole chicken, usually two at a time. I bone them, use whatever I need at the time, and freeze the rest for future use. My husband prefers white chicken meat, whereas I like dark meat. Howard jokes that this is one of the reasons that our marriage of 39 years has been so long-lasting!
