Compound butters are a great and fancy way to enhance the flavour of meat or fish. Kept in the freezer, you just need to slice off what you need for the dish you are preparing. Let the butter slowly melt on a piece of just-grilled beef, on the top of sautéed vegetables or simply spread on toasted multigrain bread.
