BUTTER—THAT BEAUTIFUL fat made from churned cream. Typically produced from cows, it can also be made with cream from goats, sheep, camels, and buffalo.
In this book, we are only using unsalted butter made from cow’s milk. I find salted butter in grocery stores to be overly salted, which can affect your baked goods. Using unsalted butter lets you control the amount of salt you want to put in your recipes, and it leaves you free to choose the kind of salt you want to use in your recipe, whether kosher or sea salt. Also, most commercial salted butters are seasoned with a brine rather than actual sea salt.
