  • About

Meat puddings should be served between the months of September and April; during the months without an “R” in them meat pies should replace them.

LE VICOMTE DE MAUDUIT

[It is unflattering but fortunate that nobody has ever asked me the difference between a meat pie and a meat pudding. Do I really know?]
This somewhat barbaric dish is best with crisp bread and a glass of fairly plain red wine. It is quickly digested and leaves a pleasant feeling on the palate, if you can swallow it at all, which some people would rather starve than do [... or if you can keep it from the eager exhibitionism of the waiter, who pants to turn it into a gastronomical proof that gray can be made with even a few too many colors (or flavors) mixed together].
