Cool desserts are the things I crave in summer. Something made with a lot of summer fruit – berries and stone fruit – or maybe something more tropical such as mango or passionfruit. Ice creams come to the fore in summer; here I’ve given recipes not just for ice cream machine-made delicacies but also frozen desserts you can make using just the freezer. In the height of summer, the perfect dessert may just be a plate of chilled melon and raspberries but with a little more effort you can knock up something more stunning and exciting.
