Gaytime Goes Nuts

While it may take its initial inspiration from the commercial ice-cream confection on a stick, this dessert is an entirely grown-up affair, paying tribute to my sexuality and gay culture in Sydney and beyond. Gaytime in its various forms has been a constant feature on my restaurant menus since the mid-nineties. It really came into its own at Universal in 2007, where it achieved iconic status, well before it was the dessert that determined the winner of the 2012 season of MasterChef Austr
