  • 200 ml pouring (35%) cream
  • 75 g liquid glucose

Method

  1. Heat the cream, glucose and vanilla bean in a small heavy-based saucepan over low heat to simmering point.
  2. Meanwhile, heat a clean and dry heavy-based saucepan over high heat for 1 minute or until hot. Add the caster sugar and cook without stirring for 8–10 minutes or until a dry caramel forms. Immediately add the warm cream mixture and cook for 5 minutes, stirrin
