Fillets of Sole with Shrimp and Oysters

Method

Add ½ cup sliced mushrooms to cooking liquids in basic recipe. Poach fillets. Thicken pan liquids with beurre manié. Add ½ cup small cooked shrimp and 1 cup raw oysters. Heat until edges of oysters curl. Spoon over poached fillets. Decorate each fillet with a slice of truffle.
