When it comes to the main course, my approach is quite simple, so not surprisingly, these recipes are the easiest dishes to execute. Mains are all about showcasing the great produce that is available in Australia. In most cases, I try to do as little to a particular piece of meat or seafood as possible I make the protein the centrepiece and complement it with interesting, sometimes unusual, garnishes.
