Street food has been an established part of Indian cuisine forever and when it comes to the standard of street food, India triumphs. There is huge precision and expertise amongst the vendors, or ‘wallahs’ as they are called there. Each has a narrow repertoire with skills honed to perfection. You will see long queues as regulars return time after time. When I’m in Kolkata I often like to explore on foot, so stopping every now and again for a little snack breaks up the day nicely. As a rule, the street food is cooked fresh and served piping hot. Even the masala chai I adore is boiled to within an inch of its life. This is good for food hygiene and locals are very discerning in this regard. In their homes, relatives always shower us with tasty treats. You can imagine that visiting more than a couple of households in a day can entail marathon snacking!
