Chinese cuisine is the second most popular cuisine in the UK and you may wonder how this has come to be. It all started with the local Chinese takeout of course. You can find one on almost any street; the only difference being good or bad. The owners of some are out to make a quick buck whereas others really pride themselves on the dishes they create. I praise those in the latter category, because I despair whenever I have a bad takeout experience.
Food-lovers all over the world are becoming increasingly aware that what they put into their mouths affects their health and well-being and, laden with bad press, Chinese takeouts and restaurants will have to take action. A revolution has to take place to wipe off MSG and artificial sauces from the menus – but this will be a major task. Far better, I believe, to follow what my grandmother advised: ‘The best way to watch what you eat is to cook and prepare the food yourself.’ She was not only a fabulous cook but extremely wise too, and she is the influence behind this chapter.
