How do I travel along the omelet continuum and find myself standing on planet meat loaf? I hope it’s immediately clear how an omelet (refined scrambled eggs) and a quiche are related. One includes dairy, one does not; one is sautéed, the other is baked. But what does an omelet have to do with a bread pudding? Or with pastry cream? Or with meat loaf? A quiche is simply scrambled eggs turned into a custard with dairy. What that custard holds can be anything—such as sausage, which gives one an excuse to make that wonderful creation of meat, fat, salt, and seasonings.
