Many a bad meal has been saved by a good pudding. It is the last thing one goes away remembering and sometimes, when a meal is consistently bad, you find yourself waiting for the bought ice-cream you know will inevitably follow. I think of the puddings we have served on the programme over the series and how well they have been received. It is good to make a pudding specially to fit like, Jennifer’s Peaches Cardinal Hume for the priests at Westminster Cathedral, but one must avoid the danger of falling into the trap of becoming like an Edwardian chef and naming every pudding for one’s friends.
