That cosy feeling when a bowl of porridge warms your cold-weary bones; sharing one too many sweet pastries and coffee refills across a table with friends; Bloody Marys and eggs on sourdough doused with Tabasco, eaten in silence, after a night out. Breakfast has always been my favourite meal. There is little I love more in life than sitting down to a leisurely breakfast of nourishing grains, runny eggs, seasonal fruit and flaky pastries. Whether you prefer to start your day sweet or savoury, or both, in this chapter you’ll find original breakfast and brunch ideas inspired by the flavours of the Baltic. Some are perfect for a quick and easy weekday breakfast, others are more suitable for drawn-out brunches with friends and family. In particular, I hope you will try typically Estonian kama (so wholesome) and hemp butter from Latvia (addictive!) as well as my own take on some Eastern European classics, such as syrniki pancakes and manna porridge.
