The first known condiment was of course salt, swiftly followed by its partner in crime, vinegar. It’s not certain when the first recipe for aioli originated, but it’s likely that it emerged from the ancient Egyptian and Mediterranean civilisations and could well be the first known inclusion of garlic in a sauce. Garlic really started to make its presence felt in the Indian chutneys of the 17th century, then 1835 brought the advent of Worcestershire Sauce which featured garlic as a main player. Nowadays, it’s a staple ingredient in everything from mayonnaise to sriracha sauce.
