In the introductory part of this book you will have read about how eating habits are changing: prosperous Asians want to eat less rice and more meat and bread, so they can be more like Americans, while Westerners want to eat less cholesterol and more fibre. There is something good in both these trends. To see the Far East more comfortably off, and the West leaner and fitter, must be encouraging. Even the news that there are now 3 million vegetarians in Britain is, in a way, pleasing, though perhaps this is not the right place to quote it.
