Great Bakes: Pithiviers and Galettes
The classic pithiviers is named after the village it comes from in north-central France, and is traditionally made with two layers of puff pastry and filled with almond cream. Recipes for pithiviers, and its cousin the galette, have strayed far from tradition over the years, as the recipes in this collection show. Pithivier
A specialty of the French town of the same name, this large, round tart with scalloped edges is made by sandwiching almond cream between two layers of pastry and baking to a golden crispiness.
