For many chefs, appetizers are their favorite course. Maximum flavor in a small portion format. They are flavor bombs, teasers for the rest of your meal. Bacon thrives in this environment, bringing an underpinning of intensely smoky and salty flavor to each dish. It’s full of rich bite and crunch. Appetizers are purposefully indulgent, passed around in small portions so nobody feels too guilty. It’s the fat you want to eat.
Luckily for me, bacon pairs so easily with everything. It adds a natural smoky depth to the chili I top my nachos with. It adds a crisp and salty layer to shrimp that I grill. It changes traditional appetizers and pumps them up, adding that final touch you need to make a dish memorable. Appetizers are where I work with wild flavors before escalating those into full-size portions.
