Spring

I love spring in the northern hemisphere. There’s something so hopeful about the longer days and the first signs of life reappearing in the dormant trees and hedgerows. It’s the sudden joy of unexpectedly warm rays of sunshine, blossom, and new-born lambs in the fields. This chapter focuses on lighter, fresher flavours after the heavier comforts of winter. We have the celebrations of Pancake Day and Easter to give us inspiration, and the opportunity to bake friendly versions of classic treats for everyone to enjoy.
