Fruit on the Grill

If you enjoy fresh fruit, you’ll love it grilled. Certain fruits, such as pineapple, caramelize beautifully on the grill because of their high concentration of sugars. You can grill many fruits much as you would grill vegetables. Slice or halve them and grill them fairly quickly over medium-high direct heat just until tender, turning once or twice. Just keep an eye on the fruit as it grills. The high sugar content can make fruits go from browned to burned in less than a minute. Most fruits have enough moisture and sugar to be grilled without oil or seasoning. But you can season some fruits, such as bananas, before grilling (see Grilled Mocha Bananas, for example). Some firm fruits, like apples and pears, can also be grill-roasted via indirect heat, just as you would bake them in an oven. However you grill them, fruits taste wonderful brushed with butter or a sweet glaze toward the end of cooking. Orange Honey Butter Glaze is our all-purpose fruit glaze. You can also brush this glaze on grill-toasted sweet breads like pound cake, gingerbread, French toast, prepared waffles, or split croissants. See the recipes throughout this chapter for more ideas.
