People are often surprised to find that many sauces in Sicilian cooking don’t include tomato. These sauces are called in bianco, fish-based sauces are made both with fresh fish and with canned tuna. As anyone who has been to Italy and to Sicily may remember, they are adamant about not serving grated cheese with a fish sauce even though many Americans have become used to sprinkling grated cheese on anything that is Italian. Traditionally, Toasted Bread Crumbs are passed around at the table to top pasta with a fish sauce.
