After our research trip to New York and the eventual evolution of the Lotus menu into being more reflective of me, it was time to start shaping Ms G’s.
Ms G’s combined the fine dining training Jow and I had undertaken with the food we liked to eat – junk food, food from our heritage and nostalgic food we loved eating as kids.
The other revelation for me at the time was that I didn’t want to chase critical acclaim anymore. While I’d had some critical success with awards and solid reviews, I started to see a problem with how we are conditioned to associate success with critical acceptance. What proved a game-changer was when I finally had the realisation that true success was a consistently busy restaurant... and that awards are just a bonus (albeit a welcome one).
