A proper cocktail hour feels very civilized, doesn’t it? Whether I’m straight from the beach, still salty and smelling like suntan lotion, or I’m dressed and it’s the start of a dinner party, making drinks and having a nibble with friends just feels good. The first clink of glasses is like the clock chiming “Let the good times begin.”
One of my favorite cocktail hour snacks is microwaved popcorn. I’m not talking about the kind that comes in a box and leaves your fingers coated with yellow dust. I take a paper bag from the grocery store, fill it with ½ cup kernels, a splash of olive oil or a spoonful of liquid coconut oil, and a sprinkle of salt. I fold the top of the bag down, leaving plenty of air and space for the corn to pop. Into the microwave for 3 to 4 minutes, and out comes perfectly popped corn. I drizzle the popcorn in the bag with melted butter, add more salt and a seasoning (I like Parmesan cheese, Chinese five-spice powder, chili powder, or even lime zest), give it a shake, and pour it into a serving bowl. It’s always a crowd pleaser.
