Embellishment has its roots in the Latin word bellus, meaning “beautiful.” We use this word to refer to the wide variety of garnishes more elaborate than the typical sprig of parsley or slice of lemon.

Some embellishments can be grouped into categories. Others defy categorization and are in a class by themselves. Some contemporary chefs are merging the art of cooking with industrial food science to create foams, “airs,” and encapsulations, all used as fanciful embellishments on plate presentations.
