With the wealth of sugarcane fields sweeping the island where many a colonial plantation owner found his fortune, sugar features strongly in Trinidad cooking. Sweets, candies, and desserts are so abundant that they could comprise an entire cookbook on their own, and it’s rare to find a Trinidadian who doesn’t have a sweet tooth.

As far as locals are concerned, when it comes to desserts, the sweeter the better. These treats are especially prolific during holidays and religious events, such as Easter and Diwali. Christmas enjoys its share of goodies too—most notably Black Cake.
