These recipes are some of the most common things I cook at home. Sometimes the thought of making a three-course meal for lunch just doesn’t appeal! Being a busy chef in the restaurant sometimes means that all I really want to eat when I get home is some toast spread with tahini and honey, or leftover potatoes fried in olive oil with chorizo, or maybe just some cold roast chicken tossed with avocado, avocado oil, rocket and mayonnaise. Light meals are a favourite of busy people, and they’re versatile: a breakfast dish could become a favourite lunch dish or a late supper snack. I’ve also added a couple of fruity breakfast-type drinks, although the berry punch may make the rest of your day a little hazy!
