  • Making pastry dough is as easy as pie! For the best results when making pastry, measure accurately and use cold ingredients. Freeze butter or shortening in advance and use ice-cold water.
  • Cut shortening and/or butter into 1-inch pieces and place in the processor bowl. Add flour and salt. Process on the Steel Blade with several quick on/off pulses, until the mixture resembles coarse oatmeal.
  • Add cold water through the feed tube in a thin stream while the machine is running. In 12 to 15 seconds, the dough will begin to gather around the blades. Do not overprocess or the dough will be tough.
  • If the dough is too dry, add extra liquid a few drops at a time. Use on/off pulses, just until the dough begins to hold together.
  • If the dough is too sticky, remove it from the processor and gently knead in a little more flour. Do not overhandle.
  • Shape the dough into 1 or 2 round discs (like a large, thick hamburger).
