Well-flavoured dips are ideal to serve along with drinks at a party. Serve the bowl of dip surrounded with a selection of salty biscuits and potato crisps. Make sure that the dip is soft in consistency, as fragil biscuits will break in a very stiff mixture and leave the dip looking unattractive. Where necessary thin down the dip with cream, lemon juice or oil and vinegar dressing, according to the recipe. Fresh cream cheese or (3 oz) (75 g) packets of fiili fat cheese may be used in any of the recipes given here.
