Pig roasts, called luaus, are traditional in Hawaii. Adapted versions of the feast are becoming popular on the mainland in farm communities. One reason is that country homes usually have the necessary makings —a young pig, space to dig a pit, the necessary rocks, wood and corn leaves—and room for many guests. The food is different and satisfies outdoor appetites.
