Be certain that the scale is resting on a level surface.
Place the scale bowl on the left platform and the scalebowl counterweight on the right platform. Set the weight on the ounce bar to zero; the scale should be balanced.
Set the scale for the amount of product you want to measure. For example, to weigh out 6 pounds 10 ounces of flour, place the 4-pound and the 2-pound counterweights on the right platform (along with the scale-bowl counterweight) and move the sliding weight on the ounce bar in front to 10 ounces. The balance beam will tilt down to the right.
Begin adding flour to the scale bowl and stop when the balance beam is level.
If you do not use the scale bowl or another container and instead place the ingredient directly on the platform, the product to be weighed must still be placed on the left platform and the counterweights on the right or you will not be able to use the ounce bar.
