Getting used to eating so much meat in New Orleans was hard for me at first. The city is different from the country, because in the country the vegetable was the main course and the meat was the accompaniment. In the country, Mother would get up and cook this big pot of greens and put pork chops on the side.
These days, if you told your children that you were having string beans for dinner, they would think you were crazy. You had better tell them you are having some meat first. Not in the country, though—there the vegetable was it.
