Meet the authors of Savory Vs Sweet

To mark the publication of Miami-based influencers Shalean and Stephanie Ghitis’ new book, Savory Vs Sweet, we caught up with one of the authors to find out how the cookbook came to be.
The playful bakes that started as a hobby in 2015 for the colleagues (now married couple), quickly became a viral sensation after they launched @soflofooodie on TikTok in 2020.

Traditional Recipes of Laos on TikTok and ckbk

The late Alan Davidson will be familiar to many ckbk users as the founder of the Oxford Companion to Food and the author of two key reference works, covering North Atlantic and Mediterranean Seafood respectively. Davidson was also a diplomat, who served as Ambassador to Laos from 1973-1975.

This fascinating TikTok video tells the story of Davidson’s rediscovery and translation of Traditional Recipes of Laos, and has led to a surge in sales of the print edition. You can explore the book in full on ckbk.

What to cook now: clementines, tangerines and satsumas

Tangerines, clementines, satsumas, are all varieties of citrus fruit also known as mandarins. These small fruits are often associated with celebrations. They reach their peak in December and January and have become synonymous with Christmas celebrations in many countries. In Asia they are given as New Year’s gifts to bring good luck, good fortune and happiness.
 
All varieties are smaller than an orange, with a flat shape, and a looser skin which makes them easier to peel. The clementine is named after one Father Clément in North Africa, who crossed a tangerine with a Seville orange and created his namesake fruit. The satsuma was developed in Japan in the 16th century, and is the tree most tolerant of the cold. Tangerines (or Mediterranean mandarins) derive from cultivars brought to England in 1805, before introduction across Europe through the 1800s.
Often eaten fresh, the soft fruit, juice and peel make a sweet fragrant addition to many dishes.
