THIS WEEK’S MEALPLAN is a combination of ultra-quick recipes and longer, slow-cooked wonders that make full use of the oven. I’ll show you how simple it is to prep ingredients and let the oven do its thing, leaving you with more leisure time to enjoy. You’ll be rewarded with hearty potato and sausage tray bakes, light summer risottos and rich beef stews, as well as a selection of 15-20-minute meals such as the summery lentil and halloumi salad and chocolate pancakes.

The homemade Pesto doubles up as a fantastic dip for nachos as well as providing intense flavour for the gnocchi. It’s my take on the Italian classic but gives a richer, creamier experience due to the addition of cream cheese. I think you’ll love it!

Don’t forget to read the tips section before you go shopping as they’ll really help you to save money. As with last week, basic ingredients are not included in the list so make sure you always have chicken, beef or vegetable stock cubes, salt and pepper, caster sugar and olive oil.
